Tosca is, of course, Puccini’s Tosca, but it’s also Tuscany, especially Elba, in the Mediterranean, where I was born and grew up in a village called Capoliveri. But moreover, Tosca is the name of a woman full of talent, my mentor in the kitchen, the one who taught me the job, transmitting my culinary knowledge. With Elise, my partner and our son Julien, we wanted to recreate here, in Gaspésie, the authentic flavors of Tuscany, as if you were there.
